I start by laying out some premium uncured Canadian Bacon on the hot zone of my griddle. Of course, I never forget to save that liquid gold, the bacon fat. Now, I layer regular bacon on the griddle, utilizing that bacon fat for an extra boost of flavor.

Creating a medium heat zone for my frozen shredded potatoes, I cook them until they’re crispy perfection, adding salt and pepper to taste. This becomes the crispy, golden foundation of my Ultimate breakfast sandwich.

Cast Iron Skillet Magic

Preheat your cast iron skillet over medium heat. Save any bacon fat rendered during cooking.

Lay out Uncured Canadian Bacon in the hot zone of the skillet.

Add regular bacon strips to the skillet, utilizing the bacon fat for cooking. Cook until crispy. Remove and set aside.

Create medium and low heat zones in the skillet for your frozen shredded potatoes.

Cook the potatoes until crispy, adding salt and pepper to taste. Set aside when done.

While the potatoes are cooking, mix up your pancake batter. Incorporate an egg for richness.

Grease the skillet with a bit of butter or cooking spray.

Pour the pancake batter onto the skillet to create delicious, fluffy pancakes. Flip them and stack them.

Layer the sandwich in the cast iron skillet: Canadian Bacon, crispy hash browns with melted American cheese, and a spread of your choice.

Top it off with another pancake to complete the Ultimate Breakfast sandwich.

Cook eggs over-easy in the skillet, using any remaining bacon fat. Add salt and pepper to taste.
