  • 1 pound of shrimp
  • Peas and carrots (frozen)
  • Soy sauce

Fire up your griddle or any suitable cooking surface. Set up a “Hot Zone” and a “Cool Zone” on your cooking surface. The Hot Zone is where most of the cooking will happen, while the Cool Zone will keep ingredients warm without further cooking.

Season the chicken with pepper and a bit of soy sauce to add flavor. You can opt for low-sodium soy sauce if you’re watching your sodium intake.

Place the seasoned chicken in the Hot Zone and let it cook, ensuring it’s evenly spread out to receive direct heat.

Step 2: Seasoning the Shrimp

While the chicken is cooking, it’s time to prepare the shrimp.

A person wearing black gloves uses a red spatula to mix a creamy white substance in a small metal bowl, with ingredients for chicken and shrimp fried rice and a knife and cutting board nearby on a kitchen counter.

Add softened butter to a bowl and add minced garlic cloves (use a garlic press for easy distribution.) Spread the butter mixture evenly in the Cool Zone to create a bed for the shrimp. Season the larger shrimp with your choice of seasoning.

Cooked shrimp sizzling in a pool of melted butter and seasonings on a hot flat grill, just like the flavorful shrimp and chicken fried rice found in your favorite stir fry dishes, with bubbles and char visible on the shrimp.

Place the seasoned shrimp on top of the garlic bed and cook until they curl up beautifully.

Step 3: Moving the Chicken and Shrimp

A person wearing gloves cooks shrimp and diced chicken on a flat-top grill with two metal spatulas, preparing ingredients for delicious Chicken and Shrimp fried rice.

Once the chicken and shrimp are cooked through, transfer them to the Cool Zone to keep them warm. Continue flipping the shrimp and ensuring they are cooked evenly without overcooking.

Step 4: Stir-Frying the Rice

Time to focus on the star of the dish – the day-old cooked rice. Day-old rice is essential to prevent it from becoming gummy during the cooking process.

A person wearing a black glove pours a pile of white rice onto a hot, greased griddle, preparing to cook chicken and shrimp stir fry with rice, with metal spatulas resting nearby.

Flatten the rice on the Hot Zone of your cooking surface and break up any clumps.

A person wearing black gloves and a denim apron pours soy sauce onto chicken and shrimp fried rice cooking on a griddle, with cooked shrimp and chicken on the side, outdoors near grills and greenery.

Add soy sauce for seasoning. You can adjust the amount to your taste, but remember that a little goes a long way. Drizzle some sesame seed oil onto the rice for an extra layer of flavor. Mix the rice well and let it heat up. Remember not to over-stir, as the goal is to heat the rice without making it mushy.

Step 5: Incorporating Veggies and Proteins

Toss in some frozen peas and carrots. I use frozen veggies, making them convenient and delicious. Continue to mix and combine all the ingredients thoroughly. Then add in your chicken and shrimp and mix thoroughly.

Step 6: Completing the Dish with Eggs

Crack three eggs, scramble the eggs directly on the griddle, and mix them into the rice and veggie blend.

Ensure the eggs are fully cooked, adding to the delightful texture of the dish.

There you have it – a tantalizing stir-fried rice dish that combines the flavors of chicken, succulent shrimp, and an array of aromatic ingredients. This recipe provides a perfect canvas for your creativity, as you can add any leftover ingredients from your kitchen. Now, grab a bowl, serve yourself a generous portion, and savor the taste of this hibachi-inspired delight. Ingredients

  • Rice cooked, day old
  • 1-2 Chicken Breasts
  • 1 lb Shrimp
  • 1/2 Onion diced
  • 3 Eggs
  • Frozen Peas and Carrots thawed
  • Soy Sauce to taste
  • Sesame Seed Oil to taste
  • Olive Oil to taste
  • Butter to taste
  • Garlic to taste

Instructions

  • Preheat your Griddle to medium heat for about 5 minutes. Apply a thin layer of oil to season the griddle as it is warming up.
  • Cook the chicken pieces in another part of the griddle. Season the chicken. Flip the chicken, halfway through cooking. On a different part of the griddle, add the shrimp pieces and season to taste. Flip each piece of shrimp, half way through cooking. Continue griddle cooking until fully done but not over cooked
  • Add the day-old rice onto the griddle and squirt some water to create moisture, add in thawed peas and carrots and let cook for about 5 minutes. Make a hole in the middle to cook the scrambled egg. Crack the egg into the middle and then break the egg yolk. Use your griddle spatula to scramble the egg by itself until just done.
  • Combine the scrambled egg, rice, salt and pepper. Cook for a few minutes and continue using the spatula to combine all the ingredients. Add the chicken and shrimp pieces to the rice mixture.

  • Sprinkle about a tablespoon or two of soy sauce over top of the fried rice mixture. Let the fried rice cook and get crispy bits mixed into it
  • Taste and adjust the seasoning if needed by adding more soy sauce, salt, and pepper.
When the desired flavor is achieved, remove from the griddle to a serving dish. Garnish with diced green onions and serve hot.
