Irresistible Chili Topped Nachos

Hey there, folks! It’s AB from Smokin and Grillin with AB, and today, we’re diving into the world of nachos, but with a twist. We’ve got a fantastic treat for you as we take the classic nachos and elevate them to epic proportions. We’ll be making homemade tortilla chips, and a flavorful chili, and topping it all off for a mouthwatering experience. So, roll up your sleeves, gather your ingredients, and let’s get cooking!


For the Homemade Tortilla Chips:

  • Corn Tortillas
  • AB’s The Level Up A Rub

For the Chili

  • 1 pound ground beef
  • 2 tablespoons brown sugar
  • 2 cloves minced garlic
  • 2 tablespoons chili powder
  • 1 cup tomato sauce
  • 2 tablespoons yellow mustard

For Assembly:

  • 2 cups shredded cheddar cheese
  • Sliced jalapeños (adjust to your heat preference)
  • Sour cream (optional)

Step 1: Crafting Homemade Tortilla Chips

We kick things off by making our own tortilla chips. Why, you ask? Well, they’re fresher, crispier, and, most importantly, they’re made with love. Simply cut corn tortillas into triangles, giving you the perfect nacho-sized chips.

Step 2: Achieving Crispy Perfection

Let’s get these chips nice and crispy. Heat your oil to around 355°F (or thereabouts) and test one chip to make sure it sizzles. Once the chip turns golden brown, drain it on some paper towels to remove excess oil.

Add some of AB’s Level Up A Seasoning right out of the oil

Step 3: Building the Flavorful Chili

In a hot pan, cook up a pound of ground beef, and then when the beef is partly cooked, add two cloves of minced garlic.

Step 4: Crafting the Ultimate Chili

Now, it’s time to create the base for our epic chili. We’re adding two tablespoons of chili powder to give it that perfect balance of heat and flavor, add a couple of tablespoons of brown sugar for a touch of sweetness.

Throw in a cup of tomato sauce, and don’t forget the two tablespoons of yellow mustard, which adds a tangy zing to the mix.

Step 5: Assembly

Our homemade tortilla chips are ready to be the canvas for our nacho masterpiece.

Spoon the delicious chili over the chips, making sure every chip gets some love. Then, generously sprinkle two cups of shredded cheddar cheese over the top. We’re talking gooey, melty goodness!

Step 6: Creative Nacho Decoration

Now, let’s give our nachos a little flair, decorating with sliced jalapeños. Arrange them on top, not just for some heat but also to add a burst of color and flavor.

  1. Begin by cutting the corn tortillas into small pieces. You can cut them into quarters or smaller if you prefer. And heat a pot of oil to around 355-360°F (180-182°C) for frying the tortilla pieces.

  2. Carefully add the tortilla pieces into the hot oil one by one to avoid sticking together. Fry until they are crispy and golden brown. You can fry in batches if needed

  3. Remove the fried tortilla pieces and set them aside to drain on paper towels

Chili Topping

  1. In a separate pan, cook the ground beef until it’s browned and cooked through. Drain any excess fat.

  2. Add minced garlic to the cooked beef and sauté briefly, taking care not to burn the garlic.

  3. Mix in chili powder to season the beef, stirring well to combine the flavors.

  4. Add diced tomatoes to the beef mixture and continue to cook until the tomatoes are softened. Then stir in yellow mustard and mix thoroughly

  5. Now, it’s time to assemble the nachos. Place a layer of the crispy fried tortilla pieces on a serving platter.

  6. Spoon the chili mixture over the tortilla chips, ensuring they are well covered.


  7. If desired, you can add toppings like shredded cheese, sour cream, or diced green onions.


  8. Your epic nachos are ready to enjoy! Serve them hot and savor the delicious flavors.
