Ingredients:

  • 1⁄2 cup olive oil
  • Juice for one orange
  • Juice of 2 limes
  • 1⁄2 cup finely chopped onion
  • 1 jalapeño pepper, seeded and minced
  • 2 tablespoons packed brown sugar
  • 1 tablespoon minced garlic
  • 2 teaspoons peeled and grated fresh ginger
  • 2 teaspoons freshly ground black pepper
  • 2 teaspoons dried thyme
  • 1 teaspoon smoked paprika
  • 1 teaspoon ground allspice
  • 1 teaspoon kosher salt
  • 1 teaspoon ground nutmeg
  • 1⁄2 teaspoon ground cinnamon
  • 1⁄2 teaspoon cayenne pepper
  • 4 pounds chicken wings

Step-by-Step Guide:

  • In a large bowl or ziolock bag, combine all ingredients. Mix well to combine.
  • Add the chicken wings to the marinade and toss until evenly coated. Cover the bowl with plastic wrap and refrigerate for at least 2 hours, or overnight for maximum flavor.
  • Preheat your grill to medium-high heat, about 375°F to 400°F.
  • Remove the chicken wings from the marinade and shake off any excess. Discard the remaining marinade.
  • Place the wings on the preheated grill and cook for 15-20 minutes, turning occasionally, until they are golden brown and cooked through. The internal temperature should reach 165°F.

  2. Add the chicken wings, squeeze out as much air as possible, and seal the bag. Massage the marinade into the wings and refrigerate for at least 2 hours and up to overnight.

  3. Preheat the grill to medium-high heat, about 400°F (200°C).

  4. Place the chicken wings on the grill and discard the marinade. Grill, turning every 10 minutes, until the chicken skin is crispy and golden and the wings have an internal temperature of 165°F (74°C), about 40 minutes. Serve.
