Dirty Cabbage puts ground beef, browned sausage, peppers, and tender cabbage in one savory pot. Tomato paste, Worcestershire, and chipotle seasoning give the meat mixture depth before the cabbage cooks down into all that flavor.
Serve it straight from the pot for a hearty dinner, or spoon it over rice when you want a fuller plate. The key is building the seasoned meat base first and stopping when the cabbage is tender enough for you.

Why You’ll Love This Recipe
- The cabbage cooks in the seasoned meat juices instead of being added as an afterthought.
- Browning the sausage and beef gives you both substantial bites and flavorful crumbles.
- Tomato paste adds richness without turning the dish into a tomato-heavy stew.
- One pot handles the browning, vegetables, and covered simmer.
Key Ingredients
Cabbage: Remove the tough core and chop the leaves into manageable pieces. It starts bulky and releases moisture as it softens, so you do not need to drown the pot in broth.
Ground beef and sausage: These make the cabbage hearty enough for dinner. Brown the sausage for color, then break the beef into crumbles. Keep some flavorful drippings, but remove excess grease if it is pooling in the pan.
Onion, bell pepper, and garlic: These bring sweetness and savory flavor. Add the garlic after the onion and pepper start softening so it does not burn before the cabbage goes in.
Tomato paste: Let it cook with the meat before adding the liquid. This takes away the raw paste flavor and helps it coat the beef and vegetables.
Chipotle seasoning, paprika, onion powder, and garlic powder: The chipotle blend supplies smoky warmth while paprika rounds out the seasoning. The card calls for paprika; smoked paprika is an optional flavor change rather than a requirement.
Worcestershire and chicken broth: These loosen the browned flavor from the pot and help distribute the seasonings through the cabbage. Taste before adding extra salt because the sausage and broth already contribute it.

Useful Tools
Choose a wide, deep skillet, braiser, or Dutch oven with a lid. It needs room for the raw cabbage and enough space to stir without spilling.

How to Make Dirty Cabbage
1. Prep the vegetables
Cut the cabbage into wedges, remove the core, and chop the leaves into bite-size pieces. Prepare the onion and pepper before you start browning the meat.

2. Brown the sausage
Heat the avocado oil in the pot over medium-high heat. Sear the sausage for about 2 minutes on the first side, then flip and cook another 2–3 minutes. Push it aside or transfer it to a clean plate while you cook the beef.

3. Brown the beef
Add the ground beef and break it into crumbles. Cook thoroughly; ground beef should reach 160°F. If your sausage is raw rather than fully cooked, follow its package directions and check for 160°F for pork or beef sausage, or 165°F for poultry sausage.

4. Build the flavor
Stir in the tomato paste and cook for a couple of minutes. Add the onion and pepper and let them soften, then stir in the garlic until fragrant. Add the onion powder, garlic powder, chipotle blend, paprika, Worcestershire, broth, salt, and pepper. Return any reserved sausage, cover, and simmer briefly.

5. Wilt the cabbage
Fold in the cabbage, adding it gradually if the pot is crowded. Cover and cook for about 15 minutes, stirring occasionally so the leaves on top work their way into the seasoned meat mixture.
6. Finish to your preferred tenderness
Check the thickest pieces of cabbage. Keep cooking if they are still too firm, or uncover briefly if there is more liquid than you want. Taste and adjust salt and pepper, then serve hot.
Pro Tips and Troubleshooting
- Give the meat time to brown before adding the cabbage. A crowded pot of raw vegetables creates steam and makes it harder to develop that first layer of flavor.
- Keep the first addition of broth to the amount in the card. Cabbage releases its own moisture as it cooks.
- Cabbage too firm? Put the lid back on and keep the heat gentle. Check the thicker pieces, not just the soft outside leaves.
- Too much liquid? Remove the lid near the end and simmer briefly, stirring so the meat does not catch on the bottom.
- Greasy finish? Spoon off excess fat after browning the meat, before adding the vegetables. Leave enough to coat the pan and carry the seasonings.

Dirty Cabbage Recipe
Ingredients
- 1 large cabbage cored and chopped
- 1 tablespoon avocado oil or enough oil for cooking
- 6 ounces sausage
- 1 pound ground beef
- 2 tablespoons tomato paste
- 1 medium onion sliced or chopped
- 1 medium bell pepper sliced or chopped
- 2 teaspoons minced garlic
- 1 teaspoon onion powder
- 1 teaspoon garlic powder
- 1 teaspoon Dash Southwest Chipotle seasoning blend or another chipotle seasoning blend
- 1 teaspoon paprika
- 1 tablespoon Worcestershire sauce
- 1/4 cup chicken broth
- salt and black pepper to taste
Instructions
- Cut the cabbage into wedges, remove the tough core, then chop the cabbage into bite-size pieces. Slice or chop the onion and bell pepper into even pieces so they cook at the same pace.
- Heat a large skillet, braiser, or Dutch oven over medium-high heat. Add a little avocado oil, then add the sausage. Sear it for about 2 minutes on the first side, flip, and cook another 2 to 3 minutes.
- Push the sausage to the side of the pan or remove it and add the ground beef. Cook and crumble the beef until browned. Do not drain the fat unless there is an excessive amount, because that flavor helps season the cabbage.
- Stir in the tomato paste and let it cook with the meat for a couple of minutes. Add the onion and bell pepper, then cook until the vegetables begin to soften and turn translucent. Stir in the minced garlic and cook just until fragrant.
- Season the meat mixture with onion powder, garlic powder, chipotle seasoning, paprika, Worcestershire sauce, chicken broth, salt, and black pepper. Stir well, cover, and let the mixture simmer for a few minutes so the seasoning works into the meat and vegetables.
- Add the chopped cabbage. The pan may look overfilled at first, but cabbage cooks down quickly. Cover and cook for about 15 minutes, stirring occasionally, until the cabbage wilts and starts taking on the flavor from the meat mixture.
- Taste and adjust with more salt and black pepper if needed. Keep cooking until the cabbage is as tender as you like it, then serve hot by itself for a low-carb meal or spoon it over rice for a fuller plate.
Notes
- Use a large, deep pan and add the cabbage in batches if it needs room to wilt.
- Let the tomato paste cook briefly before adding the broth for a deeper savory flavor.
- If the cabbage releases extra liquid, simmer uncovered near the end until the pan juices reduce.

Make-Ahead, Storage, and Reheating
Chop the cabbage, onion, and bell pepper ahead and refrigerate them in covered containers. Keep raw meat separate from the prepared vegetables.
Refrigerate cooked leftovers in shallow containers within 2 hours, or within 1 hour when the surrounding temperature is above 90°F. Keep at 40°F or below and use within 3–4 days.
Reheat in a covered skillet over medium-low heat, stirring occasionally and adding a splash of broth only if the pan looks dry. Heat the food to 165°F throughout. For microwave reheating, cover loosely and stir partway through.
You can freeze cooled portions in airtight freezer containers, but the cabbage will be softer after thawing. Thaw in the refrigerator and reheat thoroughly. Choose refrigeration for leftovers you plan to eat within a few days.
What to Serve With Dirty Cabbage
This is hearty enough to stand alone. Rice is a simple way to stretch the plate, while bread and a vegetable side work well for a larger supper.
- Southern Cornbread catches the seasoned juices in the bottom of the bowl.
- Southern Collard Greens with Turkey Legs fits a larger Southern-style table.
- Soft and Fluffy Dinner Rolls offers a soft bread option for soaking up the sauce.
- Green Beans and Bacon adds another savory vegetable side.
- Honey Balsamic Brussels Sprouts brings a sweet-tangy contrast to the seasoned beef.
- Southern Baked Mac and Cheese turns smaller servings of cabbage into a fuller comfort-food spread.
Variations and Substitutions
Use a milder chipotle seasoning blend if you want less heat. Check whether a replacement blend contains salt before adding the final seasoning. Regular paprika keeps the flavor closest to the ingredient list; smoked paprika adds another smoky layer.
Choose a sausage you enjoy, keeping its cooking requirements in mind. A fully cooked sausage needs browning and heating through; a raw sausage needs to reach its safe internal temperature before serving.
If you want a different dinner built around these flavors, follow one of these separate recipes rather than adding potatoes or seafood without adjusting the method:
- Dirty Smothered Potatoes uses potatoes, ground meat, and smoked sausage in a buttery broth.
- Dirty Green Beans and Potatoes gives you another vegetable-and-meat skillet.
- Fried Cabbage with Smoked Sausage and Shrimp adds seafood in its own complete method.
- Southern Fried Cabbage is a simpler option when cabbage is serving as the side.
Frequently Asked Questions
Why is it called dirty cabbage?
The crumbled meat and seasonings coat the cabbage, borrowing the hearty, savory idea of dirty rice. This recipe uses cabbage as its main vegetable base rather than cooking rice in the pot.
Do I need to boil the cabbage first?
No. Add the chopped raw cabbage to the seasoned meat mixture. It softens under the lid and picks up the flavor in the pot.
What if all the cabbage will not fit at once?
Add it in stages, letting the first portion wilt enough to make room. If the pot is too crowded to stir safely, use a larger pot instead of forcing the lid down.
Is the sausage supposed to be ground or sliced?
The method sears sausage before browning the beef, and the step photos show sliced sausage. Use the sausage amount in the card and follow the package’s cooking directions; ground sausage will give you a different texture.

I was looking for a different cabbage recipe and wooola look what I stubble on Smokin and Grillin with AB.
This was exactly what i was searching for. Ive used plenty of AB recipes followed the recipes verbatim and those meals came out season like a 5 star meal. I’m hooked on this recipe I’ve made it several times. I love to match it with cornbread and a sweet glass of Moscato Diasti. Good meal!!!
I loved it!! And so did my husband. He asked for seconds immediately after finishing his first bowl. Very easy to make, colorful, and tasty. I used leaner beef and it still turned out great. I had to add a little bit of olive oil when I was adding the vegetables but that’s okay and it tasted amazing. I will be making it again. Thanks for the recipe and I watch you on YouTube.
I discovered this recipe while watching u on YouTube. I just made this and my husband and I loved it! I used leaner beef so I just had to add a little olive oil when adding the veggies.
Very good recipe. Tasty and filling! I did not put it over rice. It was perfect the way it was.
It’s a good recipe, but is the paprika suppose to be smoked paprika or just regular paprika? That makes a big difference.. plz respond somebody…
Typically I use Smoked Paprika in all of my dishes. Smoked Paprika is what I would use.
I prepared this delicious recipe a couple days ago and it’s a hit at my house! It tastes even better the next day! I panicked when I forgot the chicken broth, but a little diluted Better than Bouillon fixed that and worked nicely.
Next time, I’ll pre-cook the cabbage in a little bacon grease, onion and seasonings to add a bit more flavor before adding it to the meat/veg mixture – just because we like BIG flavors!
Lastly, the final flavor kick was a few dashes of Cholula Garlic Chili sauce and a side of cornbread. Yessir!
Thank you AB!
As a diabetic currently trying keto to manage carbs, I miss jambalaya and dirty rice like crazy. This scratched that itch!
Making this again tonight. Serve with cornbread. You will love it!
I love making this for my family. My 11 year-old daughter asked for me to make this again for her and the smell in my house is amazing. It looks good, smells good and I know it will taste amazing.
