One Pan Smothered Chicken and Rice delivers tender chicken, creamy seasoned rice, and a rich smothered sauce all in one skillet. It works for weeknight dinners, Sunday dinner, or anytime you want something hearty without a sink full of dishes.
The cooking order builds the flavor. Sear the chicken first, soften the onion and garlic in the same pan, then toast the rice before it simmers in the creamy sauce.
🍽️ A Quick Look at the Recipe
Recipe Name: One Pan Smothered Chicken and Rice
⏱️ Ready In: About 1 hour, including a 5-minute rest. Timing varies with the pan and chicken size.
👨👩👧👦 Serves: 4
🥣 Main Ingredients: Chicken, long-grain white rice, chicken broth, cream of chicken soup, sour cream
📖 Dietary Info: Contains dairy; conventional condensed soup may contain wheat. Check labels.
🔥 Flavor Profile: Savory, creamy, garlicky, and gently herbed
⭐ Best For: Weeknight dinners, family meals, and one-pan comfort food
Why You’ll Love This Recipe
- Chicken, rice, and the smothered sauce finish together in the same skillet.
- Searing and sautéing build flavor before the gentle simmer.
- Long-grain white rice absorbs the broth and creamy sauce.
- Choose boneless breasts or thighs, and use cream or whole milk for the richness you prefer.
Key Ingredients
- Boneless, skinless chicken: Breast or thigh meat works. Brown it first, then dice and return it to the hot pan to finish cooking.
- Long-grain white rice: Use uncooked regular long-grain white rice for this method. Brown or instant rice needs different liquid and timing.
- Low-sodium chicken broth: This is the main rice-cooking liquid and gives you more control over salt.
- Condensed soup and sour cream: They give the sauce its body and tang. Use the condensed soup directly from the can.
- Heavy cream or whole milk: Cream makes the sauce richer; milk gives a less rich result.
- Onion, garlic, herbs, and optional mushrooms: These build the savory flavor around the chicken and rice.
Useful Tools and Optional Seasonings
These product links go to my AB shop. Purchases support Smokin’ and Grillin’ with AB.
- AB’s SPG (Salt, Pepper, and Garlic) is an optional way to season the chicken. Use it in place of some of the separate salt and pepper, then taste the finished sauce before adding more.
- AB’s Sweet Heat is an optional sweet-heat variation if that is the flavor you want. The original card keeps its savory herb-and-paprika seasoning.
- Chef Knife helps cut the seared chicken into even pieces. Treat the board and knife as raw-poultry equipment until the chicken is fully cooked; wash them before using them for ready-to-eat food.
- AB’s Premium Garlic Press is useful for preparing the fresh garlic before it goes into the pan.
- SnG Food Thermometer helps verify 165°F in the thickest chicken pieces and in reheated leftovers.

How to Make One Pan Smothered Chicken and Rice
1. Sear the Chicken
Season the chicken with salt and pepper. Heat olive oil in a large skillet or Dutch oven over medium-high heat. Sear for 4–5 minutes per side until golden. Transfer to a board and dice into bite-sized pieces as soon as it is comfortable to handle. The chicken may still be partly raw, so continue cooking right away; wash the board, knife, and hands after handling it.

2. Sauté the Aromatics and Toast the Rice
Melt the butter in the same skillet over medium heat. Cook the onion for 2–3 minutes until softened, then add garlic for another 30 seconds. If using mushrooms, cook them for 3–4 minutes. Add the rice and stir for 1–2 minutes to lightly toast it.

3. Mix the Smothered Sauce
Whisk the condensed cream of chicken soup, sour cream, garlic powder, onion powder, thyme, paprika, and optional cayenne in a bowl until smooth.

4. Bring It Together
Pour the broth and cream or milk into the skillet. Stir in the sauce mixture, then fold in the diced chicken. Bring the pan to a gentle simmer.
5. Simmer Until Tender
Reduce the heat to low and cover. Simmer gently for 20–25 minutes, until the rice is tender, the chicken reaches at least 165°F, and most of the liquid is absorbed. Keep the heat low so the creamy base does not scorch. If the rice is firm and the pan looks dry, add a little broth, cover again, and continue cooking.
6. Rest and Serve
Remove from the heat and rest uncovered for 5 minutes. Taste and adjust the seasoning, garnish with parsley, and serve the chicken with the creamy rice and sauce.

Pro Tips for Tender Rice
- Use a heavy pan with a well-fitting lid and keep the simmer gentle; boiling hard can scorch the creamy sauce before the rice is tender.
- Check near the end rather than constantly lifting the lid. If sticking is a concern, gently scrape the bottom once with a spoon and replace the lid.
- The chicken and rice both need to be done: look for tender grains and check the thickest chicken pieces for 165°F.
- The 5-minute rest helps the sauce settle. Add a little broth when reheating if the rice has absorbed more liquid.

One Pan Smothered Chicken and Rice
Ingredients
- For the Chicken and Rice:
- 4 boneless skinless chicken breasts or thighs
- 1 tablespoon olive oil
- Salt and pepper to taste
- 1 medium onion chopped
- 2 cloves garlic minced
- 1 cup long-grain white rice
- 2 cups low-sodium chicken broth
- 1/2 cup heavy cream or whole milk
- 1 tablespoon butter
- 1 cup sliced mushrooms optional
- For the Smothered Sauce:
- 1 can 10.5 oz cream of chicken soup
- 1/2 cup sour cream
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon dried thyme
- 1/2 teaspoon paprika
- 1/4 teaspoon cayenne pepper optional
- Fresh chopped parsley for garnish
Instructions
- Season chicken with salt and pepper. Heat olive oil in a large skillet or Dutch oven over medium-high heat. Sear chicken 4–5 minutes per side until golden brown. Transfer to a board and dice into bite-sized pieces as soon as it is comfortable to handle. The chicken may still be partly raw; continue cooking immediately, and wash the board, knife, and hands after handling it.
- In the same skillet, melt butter over medium heat. Add onion and cook 2–3 minutes until soft. Add garlic and cook 30 seconds. If using mushrooms, add them now and cook 3–4 minutes. Stir in rice and toast for 1–2 minutes, stirring constantly.
- In a bowl, whisk together cream of chicken soup, sour cream, garlic powder, onion powder, thyme, paprika, and cayenne (if using) until smooth.
- Pour in chicken broth and cream (or milk). Stir in the sauce mixture until fully combined. Add diced chicken back to the skillet and nestle into the rice. Bring to a gentle simmer.
- Reduce heat to low. Cover and simmer for 20–25 minutes, or until rice is tender, chicken is cooked through (165°F), and liquid is mostly absorbed.
- Remove from heat and let sit uncovered for 5 minutes. Garnish with chopped parsley. Serve hot, spooning sauce and rice over chicken.
Notes
- Use regular uncooked long-grain white rice and a heavy pan with a well-fitting lid. Brown or instant rice is not a direct substitution for the stated liquid and timing.
- Keep the simmer gentle to avoid scorching. If the rice is firm and the pan looks dry, add a little broth, cover, and continue until the rice is tender and the chicken reaches 165°F.
- For make-ahead meals, cook the chicken fully to 165°F before cooling promptly in shallow containers. Do not refrigerate partly cooked chicken to finish later. Whole milk can replace heavy cream for a less rich sauce.

Make-Ahead, Storage and Reheating
To make this ahead, finish cooking the chicken to 165°F and the rice until tender, then cool promptly in shallow containers. Alternatively, chop the vegetables and mix the sauce ahead, keeping raw chicken separate and refrigerated until cooking time. Do not refrigerate partly cooked chicken to finish later; USDA explains why the cooking should be completed without that pause.
Divide leftovers into shallow containers and refrigerate within 2 hours, or within 1 hour when the temperature is above 90°F. Keep at 40°F or below and use within 3–4 days.
Reheat the chicken and rice until it reaches 165°F throughout, adding a little broth if needed. Cover portions in the microwave and stir or rotate for even heating. See USDA’s leftover food-safety guidance for safe cooling and reheating.
Freeze meal-size portions for up to 2 months for best texture, then thaw in the refrigerator. Creamy rice can soften and the sauce can separate slightly after freezing; stir gently with a little broth when reheating.
What to Serve With Chicken and Rice
- Southern Style Green Beans adds a vegetable side to the creamy skillet.
- Southern Fried Cabbage brings a smoky, tender side.
- Southern Coleslaw gives the meal a cool, crunchy contrast.
- Pull Apart Garlic Bread is handy for catching the sauce.
- Southern Collard Greens with Smoked Turkey Legs rounds out a Southern-style dinner.
Variations and Substitutions
- Choose boneless thighs or breasts and check doneness rather than relying only on the clock. Different piece sizes can change cooking time.
- Use whole milk instead of heavy cream for a less rich sauce, or leave out the optional mushrooms and cayenne.
- For a bolder rice skillet, try Cajun Chicken and Rice Skillet.
- For a different creamy chicken dinner, make Creamy Chicken Spaghetti or Cajun Chicken Cobbler. These are separate recipes with their own liquid ratios and cooking methods.
Frequently Asked Questions
Can I Use Cooked or Instant Rice?
This method is written for uncooked regular long-grain white rice. Cooked or instant rice absorbs liquid differently, so it is not a direct swap.
Can I Use Brown Rice?
Brown rice needs a longer cooking time and a different liquid balance. Keep white rice for this recipe rather than making a direct substitution.
Why Is My Sauce Still Loose?
Let the pan rest once the rice is tender and chicken is safely cooked. The rice will absorb a little more liquid. If needed, simmer briefly uncovered while watching the bottom so it does not scorch.

Great!
An upgrade from your grandma’s old chicken and rice casserole! If you’re craving chicken and rice in a delicious, creamy sauce, this is the one.
This is a very good recipe came out tasting wonderful and it all came together in 1 large Dutch oven on the stove top. I tried to follow it exactly and used whole milk.
This is delicious and so forgiving if you don’t have all the ingredients readily available and need to get dinner going. I used boneless skinless chicken thighs. Didn’t have mushrooms so I cooked some chopped carrot and celery with the onion. Needed to use up some hatch green chili so I chopped that and threw it in. Only had fat tree milk which I did use but also tossed in 8 oz. of cream cheese cubed with the milk. Used lots of thyme. This kitchen smells amazing!! Thank you for the recipe!
I’ve been watching your videos for a while. Today I was looking for a chicken dish…..something different. I decided to try the smothered chicken and rice. It was so easy and delicious!
Bruh, love your presentation and your recipes. They are super easy to follow, especially with the vids. Cooking this right now and it smells and looks delicious.
